Tenth day of Durga Puja in Bengal: Durga idols are immersed (Bisarjan) on the udaya Dashami.

The story

Two, and which one you're told depends on where you are. In the north, Rama killed Ravana on this day after nine nights of battle. In the east and parts of the south, Durga killed Mahishasura after nine nights, hence Navratri preceding it.

How it is observed

In the north, Ramlila performances for nine nights culminating in giant effigies of Ravana, Meghnad and Kumbhakarna burned at sunset. In Bengal, Durga's immersion, with sindoor khela, married women smearing each other with vermilion, before the idols leave. Weapons and tools are worshipped (ayudha puja); vehicles are bought; children begin school.

Food

Jalebi and fafda in Gujarat, specifically on this day. Bengali sweets and shubho bijoya visits. In the south, sundal and the Golu doll display closes.

Regional variation

This is one of the most regionally divergent festivals in India. Mysore Dasara is a state festival with the Jamboo Savari elephant procession and an illuminated palace. Kullu Dussehra in Himachal starts when everyone else's ends. Bengal's is the close of Durga Puja. Tamil Nadu and Karnataka hold Ayudha Puja and the Golu display. Nepal keeps it as Dashain over fifteen days.

Common questions

On Dussehra, is Ravana burnt or is Durga immersed?
Both, in different parts of India, and neither is more correct. North India marks Rama's victory over Ravana and burns the effigies. Bengal and the east mark Durga's victory over Mahishasura and immerse her idols. Karnataka has Mysore Dasara with the elephant procession, and the south holds Ayudha Puja for tools and weapons. Same tithi, four quite different festivals.
What happens on each of the four days of Durga Puja?
Saptami opens with the Nabapatrika, nine plants bathed at dawn as forms of the goddess. Ashtami has Sandhi Puja at the junction with Navami, the most charged moment of the four days. Navami is the great arati. And Dashami is Sindoor Khela, when married women smear each other with vermilion before the idols go for immersion.
