Why does Tagore Jayanti fall on two different dates?

Because Bengal counts it as Pochishe Boishakh, the twenty-fifth of Boishakh in the Bengali calendar, while the Gregorian date is 7 May. The two don't always align exactly, which is why you'll see both. Bengal follows the Bengali date.
